No Bake Cinnamon Cereal Spheres


Back-to-school means being more vigilant about family meal and snack planning. This year I want to try some new kid-friendly recipes, particularly with a bit more protein. These fit that bill. They took about 10 minutes of prep work and an hour to chill. While they're not low sugar, they are pretty low fat, have a protein punch, and are a decadent afternoon treat. Lilah helped me make up a batch of these sweet spheres for our first week back-to-school. Mmmm 

Ingredients:
6T. unsalted butter
12 oz. marshmallows
1 rounded scoop vanilla protein powder
1/2 t. salt
8 c. protein cheerios
1.5 small box raisins
1/3 cup white chocolate chips



Directions:
1. Spray a 10-by-15-inch rimmed baking sheet with cooking spray. Line with waxed paper; spray paper with cooking spray, and set aside.

2. In a large saucepan, melt butter over medium heat. Add marshmallows, protein powder, white chocolate chips and salt; cook, stirring occasionally, until marshmallows have melted, about 5 minutes. 

3. Remove from heat, and stir in cereal and raisins.




4. Immediately transfer mixture to prepared baking sheet. Using a spatula coated with cooking spray, press down  into a flat sheet. 



5. Let cool, about 1 hour. Cut into 18 sections and roll tightly into cereal spheres. Store in the refrigerator.

6. Enjoy! Lick your fingers, then go wash your hands.
