Summer is such a great time for fitness: long bike rides on the trail, morning runs, swimming laps at the pool, etc. After a good workout I know I need to replenish, but on hot, humid, Midwestern afternoons I crave something cool, refreshing and easy to digest. This coconut milk smoothie hits the spot.
Recipe for two
1 1/2 cup coconut milk
1 ½ cup vanilla Greek yogurt
3/4 cup fat free frozen vanilla yogurt
A heaping handful of blueberries
A good handful of cubed pineapple OR a 1/2 cup fresh pineapple juice
Chia seeds (optional if you want an extra nutrient punch)
Blend well. Serve poolside, if possible.
