The Easiest Pumpkin Muffin Recipe, Ever.

I have a certain affinity for all things pumpkin. This appreciation is closely matched by baked good recipes simple enough to hand over to my teenage son on sleepy a Saturday morning. (This lemon bar recipe comes to mind...)  So, when I saw a two-ingredient pumpkin muffin recipe floating around Facebook, it seemed too good to be true. We had to test it out immediately.

And the verdict: pure genius. This is feel good food for busy families.

Here's what you'll need:
1 can (15 oz) of pumpkin (buy organic, it's good for everyone)

Then, choose ONE:
1 box of spiced cake mix (because cake mix is good for you too, right?!)
1 box of carrot cake mix (It's a hard choice, I know. Don't worry, you can make another batch next week... If in doubt, go carrot or go home.)

1. Preheat the oven to 350.
2. Mix your two ingredients in a bowl.
3. Line your muffin tin with papers or spray with Pam.
4. Spoon mixture evenly into 12 muffins.
5. Bake for 20-25 minutes or until a toothpick comes out clean.

That's it. Seriously. 

Enjoy with a smear of cream cheese and a latte.
